Ingredients
  • 1 tbsp olive oil
  • 1 cup sweet onion (roughly chopped)
  • 2 clove garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 cup chicken stock
  • 1/4 tsp kosher salt
  • 3/4 cup crushed tomatoes
  • 3 cup shredded chicken
  • Salt and pepper (to taste)

  • 10 tortillas
  • 2 avocados
  • 1/4 cup red onion (diced)
  • 1/4 cup cotija
  • 1 lime

    Heat a large pan on medium heat with olive oil. Add the onion. Stir-fry the onions for approximately 4 minions or until cooked through. Add the garlic and then continue to cook for 30 seconds more. Add the chipotles, oregano, and cumin, and continue to fry for 1 minute. Add the tomatoes, stock while bringing it to a simmer, cook for 7 minutes and add salt to your taste.

     Place the tomato mixture in a high-powered or regular blender, and blend until smooth.

    Return the blended sauce to the pan over low heat. Add the chicken, and cook for 5 minutes. Taste and add more salt if necessary.

    Prepare the garnishes. To assemble, top the tortillas with the chicken and garnish with the avocado slices, cilantro, red onion, and cotija. Serve with a lime wedge.
