Description

Creating a delicious chicken tahini rice bowl is a delightful culinary endeavor. Here's our variation of it. 

Ingredient
    For the Chicken
  • 1 pound boneless skinless chicken breast
  • 2 teaspoons dijon mustard
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper
  • For the rice
  • 1 cup rice
  • 1/4 cup cilantro (finely chopped)
  • 2 tablespoons lime juice (freshly squeezed)
  • Salt
  • For the dressing
  • 1/4 cup tahini
  • 2 tablespoons plain yoghurt
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon soy sauce
  • Salt and pepper
  • For the bowls
  • 1 red onion (thinly sliced)
  • 1 cucumber (sliced to quarter moons)
  • 1 cup cherry tomatoes (halved)
Instructions
  1. Cut the chicken breasts into 1-inch cubes. In a large bowl mix together all the chicken ingredients. Cover and set aside to marinate for at least 10 minutes. 

  2. Cook the rice according to the package instructions. When done stir in the cilantro, lime juice, and salt.

  3. Heat a large pan over medium-high heat. Cook the chicken.

  4. In a small bowl mix the tahini, yoghurt, soy sauce and lemon juice. Add warm water to thin out the dressing as needed, 1-2 tablespoons should be enough. Season with salt and pepper. 

  5. Assemble your bowl. Start with the rice, top with the chicken, and lastly add the veggies. Drizzle with the tahini dressing.

  • Make sure to use high-quality chicken, fresh vegetables, and good-quality tahini. The better the ingredients, the tastier the dish.
  • Use fragrant and flavorful rice varieties like jasmine or basmati to complement the dish. You can also cook the rice with a bit of chicken or vegetable broth for added taste.
