Ingredients
  • 1 1/2 lb beef chuck or stewing beef (cubed)
  • 1 onion (chopped)
  • 1 lb potatoes (peeled and cubed)
  • 1 lb sweet potatoes (peeled and cubed)
  • 2 carrots (sliced)
  • 1 bell pepper
  • 2 clove garlic (minced)
  • 2 tbsp tomato puree
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 3 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Olive oil
  • Salt and pepper
  • Fresh parsley (for garnish)
Instructions

    Preheat your oven to 325F/160C.

    Heat some olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

    Pat the beef cubes dry with paper towels and season with salt and pepper. Brown the beef in batches in the hot oil until nicely seared on all sides. Remove it and set it aside.
