Ingredients
  • 1 1/2 pound beef chuck or stewing beef (cubed)
  • 1 onion (chopped)
  • 1 pound potatoes (peeled and cubed)
  • 1 pound sweet potatoes (peeled and cubed)
  • 2 carrots (sliced)
  • 1 bell pepper
  • 2 cloves garlic (minced)
  • 2 tablespoons tomato puree
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 3 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Olive oil
  • Salt and pepper
  • Fresh parsley (for garnish)
Instructions
  1. Preheat your oven to 325F/160C.

  2. Heat some olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

  3. Pat the beef cubes dry with paper towels and season with salt and pepper. Brown the beef in batches in the hot oil until nicely seared on all sides. Remove it and set it aside.

  4. In the same pot, add the chopped onions and garlic. Sauté until they become translucent. Add the carrots and peppers and cook for a few minutes until they begin to soften.
