Ingredients
  • 1/2 lb ground beef
  • 1 cup jasmine rice
  • 1 baby bok choy
  • 1 carrot
  • 1 cucumber (sliced)
  • 1 clove garlic (minced)
  • 1 tbsp soy sauce
  • 1 tsp laksa spice
  • 2 tbsp Soy and sesame mayo
  • Olive oil
  • Salt and pepper
Instructions
  1. In a medium pot heat up 1 tablespoon olive oil on high heat. Cook the minced garlic for 30 seconds. Add 2 cups of water. When the water boils lower the heat to medium and add the rice. Cook until rice is done around 10-12 minutes.

  2. Peel and cut the carrot to half-moons. Chop the bok choy.

  3. Heat up 1 tablespoon olive oil in a large pan. Add the carrots. Cook until they soften 4-5 minutes. Add the bok choy. Cook for 2 more minutes. Transfer to a bowl and season with salt and pepper.

  4. In the same pan brown the ground beef. When the meat is cooked, add the laksa spice, soy sauce and carrots and bok choy. Mix well.

  5. Assemble the bowl. Add rice top with the meat mixture, sesame mayo and sliced cucumber.

Tips
  • Slice vegetables thinly to ensure they cook quickly and evenly.
  • Don't overcook the beef.
  • Serve the beef and veggies mixture over a bowl of hot, freshly cooked rice. The rice will absorb the flavorful sauce.
  • Garnish your Beef Rice Bowl with a variety of toppings, such as chopped scallions, pickled ginger, nori (seaweed) strips, or a drizzle of sesame seeds. These add texture and extra layers of flavor.
  • You can customize your Beef Rice Bowl by adding extras like a poached or soft-boiled egg, a dollop of wasabi, or some grated daikon radish for a refreshing contrast.
  • Beef Rice Bowl is highly customizable. Try variations like adding vegetables such as spinach or bean sprouts, or even substituting the beef with other proteins like chicken or tofu for a different twist.
  • Fresh ingredients, especially quality beef, can make a significant difference in the final flavor and texture of your Beef Rice Bowl.
