Description

The Taco Beef Bowl is a versatile and satisfying dish with plenty of room for creativity. This recipe is the perfect way to reuse taco meat leftovers. 

Ingredients
  • 1 cup brown rice
  • 1/2 lb ground beef
  • 1 carrot (sliced to quarter moons)
  • 1 cup green onions (chopped)
  • 1 bell pepper (julienned)
  • 1 cucumber (sliced to quarter moons)
  • 1 tbsp taco seasoning
  • Soy mayo
Instructions
  1. Cook the rice according to the package instructions.

  2. In a large pan heat up a tablespoon of olive oil. Add the ground beef. Cook until browned.

  3. Add the taco seasoning, carrot, and green onions. Cook for 2-3 more minutes.  

  4. Build your bowl. Start with the rice, top with the beef, sliced cucumber and bell pepper. Drizzle with soy mayo.  

  5. Enjoy!

Tips
  • Season the ground beef with salt, pepper, and any other desired seasonings. You can also add minced garlic for extra flavor.
  • Opt for lean ground beef (usually 90% lean or higher) to minimize excess fat and grease in your dish.
  • Taste your beef mixture as you go along and adjust the seasoning to achieve a well-balanced flavor.
  • You can also experiment with different toppings and variations
  • Feel free to add vegetables like sweet corn, sautéed mushrooms, or sliced red onions to enhance the nutritional value and flavor of your beef rice bowl.
