Description

The Taco Beef Bowl is a versatile and satisfying dish with plenty of room for creativity. This recipe is the perfect way to reuse taco meat leftovers. 

Ingredients
  • 1 cup brown rice
  • 1/2 lb ground beef
  • 1 carrot (sliced to quarter moons)
  • 1 cup green onions (chopped)
  • 1 bell pepper (julienned)
  • 1 cucumber (sliced to quarter moons)
  • 1 tbsp taco seasoning
  • Soy mayo
Instructions

    Cook the rice according to the package instructions.

    In a large pan heat up a tablespoon of olive oil. Add the ground beef. Cook until browned.

    Add the taco seasoning, carrot, and green onions. Cook for 2-3 more minutes.

    Build your bowl. Start with the rice, top with the beef, sliced cucumber and bell pepper. Drizzle with soy mayo.
