Description

Ingredients
  • 8 ounces rice noodles
  • 1/2 pound beef (thinly sliced)
  • 1 cup green onions (sliced)
  • 2 cloves garlic (minced)
  • 2 teaspoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon neutral oil
  • 1/2 teaspoon baking soda
  • For the sauce
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon sriracha
  • 2 tablespoons water
  • Toppings
  • Green onions
  • Chopped peanuts
  • Sesame seeds
  • Cucumber sticks
Instructions
  1. Cut the beef into thin slices. Transfer it to a bowl and add 2 tsp. cornstarch, 1 tbsp. soy sauce the baking soda and 1 tbsp. neutral oil. Mix and let it marinade while preparing everything else.
  2. Prepare the sauce. In a bowl combine all the sauce ingredients. Mix well until fully combined 

  3. Heat up a tablespoon of oil in a large pan over medium-high heat. Fry the beef until fully cooked. Remove from the pan. 

  4. Cook the rice noodles according to the package instructions. 

  5. In a large pot sauté the green onions and garlic for 1 minute. Remove from the heat. Add the noodles and sauce and mix together.

  6. Serve the noodles topped with the beef, chopped peanuts, green onions, sesame seeds, and cucumber sticks.

Tips
  • If you're following a gluten-free diet, substitute soy sauce with tamari sauce to ensure your dish remains gluten-free.
  • Be careful not to overcook the rice noodles when soaking them in hot water. They should be softened but still have a slight bite to them. Overcooked noodles can become mushy.
  • Use natural peanut butter without added sugar or oil. You can also use almond or cashew butter for a different flavor.
  • Create a flavorful sauce. Adjust the quantities to suit your taste preferences.
