Dice the onion and carrot. You can also grate them or use a food processor.
Heat up the oli in a large pan. Add in the onion and carrot. Cook until they soften then add the beef. Cook until the beef is browned.
Add the canned tomatoes, rice, spices and a cup of water. Cook until the rice is almost fully done. Add more water if needed.
Start stuffing the peppers using a small spoon. If you have any stuffing left put it around the peppers and add 1/2 cup of water to the baking dish.
Bake in a preheated oven at 400F/200C for 30 minutes or until the peppers are tender.
Serve as is or try our stuffed peppers sauce and enjoy!
