Description

Ingredients
  • 8 oz rice noodles
  • 4 clove garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 bell pepper (thinly sliced)
  • 1 carrot (thinly sliced)
  • 3 green onions (chopped)
  • 2 tbsp vegetable oil
  • For the sauce
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce (or vegetarian oyster sauce)
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp red pepper flakes
Instructions
  1. Cook the noodles according to the package instructions until they are al dente. Drain and set aside.

  2. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, and red pepper flakes. Set aside.

  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

  4. Add the bell pepper and carrot. Stir-fry for 3-4 minutes, or until the vegetables are tender. 

  5. Add the cooked and drained noodles to the skillet with the stir-fried vegetables.

  6. Pour the prepared sauce over the noodles and vegetables. Toss everything together to coat the noodles and veggies evenly. Cook for an additional 2-3 minutes, stirring continuously, until everything is heated through.

  7. Remove the skillet from heat. Stir in the sliced green onions. Garnish with sesame seeds and chopped green onions, if desired.

Tips
  • Garlic noodles come together quickly, so it's helpful to have all your ingredients prepped and ready to go before you start cooking. Mince the garlic, grate the ginger, and slice the vegetables beforehand.
  • Whenever possible, use fresh garlic and ginger for the best flavor. You can store ginger in the freezer and grate it from frozen for convenience.
