Heat a 1 tablespoon of olive oil in a medium-size pot, over high heat. Add the ginger, cook for 1 minute. Add 1 1/2 cups of water the rice, season with salt, and cook covered with a lid for 10-12 minutes. Let rest for another 10 minutes without opening the lid.
In a small bowl mix the white vinegar with 1 tablespoon of water and 1 teaspoon sugar. Add the finely sliced onion. Set aside.
Grate the carrot. Cut the bok choy to half-inch pieces, and the cucumber to half moons.
In a large pan heat up a tablespoon of olive oil. Cook the minced garlic for 1 minute. Add the ground beef. Cook until browned.
Add the carrot and bok choy. Cook for 2-3 minutes and add the hoisin sauce. Cook for 1 more minute.
Build your bowl. Start with the rice, top with the beef, cucumber and pickled red onion. Sprinkle with sesame seeds, and drizzle with soy mayo.

- Season the ground beef with salt, pepper, and any other desired seasonings. You can also add minced garlic and ginger for extra flavor.
