Instructions

  1. Cut the chicken into small pieces, place it in a bowl. Mix in all the spices and some olive oil. Set it aside. 

  2. Slice the peppers and onions to your preferred size.

  3. Heat up some olive oil in a pan over medium-high heat. Cook the onions and peppers until they soften, than add the chicken. When the chicken is done stir in the tomato paste. Cook for 1 more minute.

  4. Start filling and arranging your tacos in a baking dish. If you don't have mini tortillas you can use a glass to cut regular ones into smaller circles.

  5. Sprinkle some cheese on top and bake at a preheated oven at 400F/200C for 5 minutes or until the cheese melts.

  6. Serve with guacamole, sour cream, and lime. Enjoy!
