- Cut the beef into thin slices. Transfer it to a bowl and add 2 tsp. cornstarch, 1 tbsp. soy sauce the baking soda and 1 tbsp. neutral oil. Mix and let it marinade while preparing everything else.
Prepare the sauce. In a bowl combine all the sauce ingredients. Mix well until fully combined
Heat up a tablespoon of oil in a large pan over medium-high heat. Fry the beef until fully cooked. Remove from the pan.
Cook the rice noodles according to the package instructions.
In a large pot sauté the green onions and garlic for 1 minute. Remove from the heat. Add the noodles and sauce and mix together.
Serve the noodles topped with the beef, chopped peanuts, green onions, sesame seeds, and cucumber sticks.
Tips
- If you're following a gluten-free diet, substitute soy sauce with tamari sauce to ensure your dish remains gluten-free.
- Be careful not to overcook the rice noodles when soaking them in hot water. They should be softened but still have a slight bite to them. Overcooked noodles can become mushy.
