  1. Preheat the oven to 400F/200C. In a large skillet or medium baking dish mix the tomatoes, shallot, garlic, and almost all oil (save some for later). Season with salt and pepper to taste, and toss together. 

  2. Place the block of feta in the center of the tomato mixture and drizzle with remaining oil. Scatter thyme over tomatoes. Bake in oven for 40 to 45 minutes, until tomatoes are bursting and feta is golden.

  3. Meanwhile, in a large pot bring salted water to a boil and cook pasta according to package directions until al dente. Save ½ cup pasta water before draining.

  4. In the oven skillet containing the tomatoes and feta, add cooked pasta, pasta water, and lemon zest (optional) and toss until combined. Garnish with basil when serving.
