  1. Bring a pot of water to a boil. Cook the bulgur according to the package instructions. When fully cooked drain and set aside. 

  2. Heat up a tablespoon of olive oil in a large pan over medium heat. Season the salmon to your liking (garlic, dill, paprika, salt, and black pepper all work great) Cook the salmon skin side down for 2-3 minutes. Flip and cook for 2-3 more minutes.

  3. Mix the yoghurt with the chopped mint, a squeeze of lime juice, and salt and pepper to taste. 

  4. Dice the tomatoes, cucumber and onion. Mix them with the cooked bulgur. Add the parsley, squeeze in the lemon and season with salt and pepper to taste.

  5. Assemble the bowl. Start with the bulgur veggie mixture, place the salmon on top, and add the yoghurt dressing.
